- Preheat & make the glaze: Preheat oven to 375°F (190°C). Mix 3 tablespoons honey, 1 teaspoons cinnamon, 1 teaspoons vanilla extract, and 1 tablespoons lemon juice in a small bowl.
- Prepare the pears: Place 4 ripe pears, halved and cored cut-side up on a baking dish. Brush generously with the honey glaze.
- Roast: Roast for 25 minutes til golden and tender, brushing with remaining glaze halfway through.
- Assemble: Let cool for 5 minutes. Serve each pear half with a dollop of 1 cups Greek yogurt or mascarpone, a sprinkle of 0.5 cups crushed walnuts or pecans, and a drizzle of any remaining glaze.
- Garnish and serve: Garnish with 1 fresh mint leaves for garnish and serve warm.
Notes
Tip: Choose pears that are ripe but still firm — they hold their shape better when roasted. For an extra indulgent touch, add a small scoop of vanilla ice cream alongside the yogurt.
